Knife Skills: Beef

Learn the basics of how to properly handle beef. Participants will be guided by demonstration on the techniques of breaking down a side of beef into the various cuts that are most common for home cooking. We will make steak au poivre (brandy peppercorn steak) with whipped potatoes, vegetable and beef skewers, perfect mini hamburgers, and chocolate chip cookies.
