Oysters on the half shell with sauce mignonette
1/2 oz Osetra caviar with sifted egg, potato blini, brunoise shallot and hatched caper.

Salad of baby kale, citrus supreme sauce, salt-roasted beets and blue cheese

Grilled sturgeon with roasted parsnip, carrot and turnip in gold consommé
Duck confit with chestnut veloute, savory pain perdu and almond fried cabbage
Filet au poivre of green peppercorn, cream and brandy. Sautéed patty & petter pan squash
Filet au Rossini. Foie gras stuffed filet mignon with black truffle.
